- Rice flour - 100 grams
- Tapioca starch - 30 grams
- Water - 250 milliliters
- Salt - 1/2 teaspoon
- Mushrooms (shiitake or button) - 50 grams, finely chopped
- Carrot - 1 small, grated
- Spring onions - 2, finely chopped
- Vegetable oil - 1 tablespoon
- Black pepper - 1/4 teaspoon
Steps
- In a mixing bowl, combine the rice flour, tapioca starch, salt, and water. Whisk until smooth and set aside to rest for 15 minutes.
- In a skillet, heat the vegetable oil over medium heat. Add the chopped mushrooms, grated carrot, and spring onions. Sauté for about 5 minutes until the vegetables are tender.
- Add black pepper to the vegetable mixture and stir well. Remove from heat and set aside to cool slightly.
- Prepare a steamer and bring water to a boil. Grease small heatproof dishes or a tray with a little oil.
- Pour a small amount of the rice flour batter into the greased dishes, just enough to cover the bottom. Steam for 5 minutes until set.
- Remove from the steamer and add a spoonful of the vegetable mixture on top of the steamed layer. Pour more batter over the filling to cover it completely.
- Return the dishes to the steamer and steam for an additional 10 minutes until fully cooked.
- Let cool slightly before removing from the dishes. Serve warm or at room temperature.
