Ingredients

  • Rice flour - 100 grams
  • Tapioca starch - 30 grams
  • Water - 250 milliliters
  • Salt - 1/2 teaspoon
  • Mushrooms (shiitake or button) - 50 grams, finely chopped
  • Carrot - 1 small, grated
  • Spring onions - 2, finely chopped
  • Vegetable oil - 1 tablespoon
  • Black pepper - 1/4 teaspoon

Steps

  1. In a mixing bowl, combine the rice flour, tapioca starch, salt, and water. Whisk until smooth and set aside to rest for 15 minutes.
  2. In a skillet, heat the vegetable oil over medium heat. Add the chopped mushrooms, grated carrot, and spring onions. Sauté for about 5 minutes until the vegetables are tender.
  3. Add black pepper to the vegetable mixture and stir well. Remove from heat and set aside to cool slightly.
  4. Prepare a steamer and bring water to a boil. Grease small heatproof dishes or a tray with a little oil.
  5. Pour a small amount of the rice flour batter into the greased dishes, just enough to cover the bottom. Steam for 5 minutes until set.
  6. Remove from the steamer and add a spoonful of the vegetable mixture on top of the steamed layer. Pour more batter over the filling to cover it completely.
  7. Return the dishes to the steamer and steam for an additional 10 minutes until fully cooked.
  8. Let cool slightly before removing from the dishes. Serve warm or at room temperature.
