- Green onions - 2 tablespoons, chopped
- Carrot - 1/2 medium, grated
- Spinach - 50 grams, chopped
- Cooking oil - 1 tablespoon
- Soy sauce - for dipping
Steps
- In a mixing bowl, combine rice flour, tapioca flour, water, salt, and black pepper to create a smooth batter.
- Stir in chopped green onions, grated carrot, and chopped spinach.
- Heat a non-stick skillet over medium heat and add half of the cooking oil.
- Pour half of the batter into the skillet, spreading it evenly to form a thin layer.
- Cook for about 5-7 minutes until the bottom is golden brown and crispy.
- Flip the cake carefully, then crack one egg on top and cover the skillet to let it cook for another 3-4 minutes until the egg is set.
- Remove the cake from the skillet and repeat the process with the remaining batter and egg.
- Cut the cakes into squares and serve warm with soy sauce for dipping.
