  • Tapioca flour - 30 grams
  • Water - 250 ml
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Eggs - 2 large
  • Green onions - 2 tablespoons, chopped
  • Carrot - 1/2 medium, grated
  • Spinach - 50 grams, chopped
  • Cooking oil - 1 tablespoon
  • Soy sauce - for dipping

Steps

  1. In a mixing bowl, combine rice flour, tapioca flour, water, salt, and black pepper to create a smooth batter.
  2. Stir in chopped green onions, grated carrot, and chopped spinach.
  3. Heat a non-stick skillet over medium heat and add half of the cooking oil.
  4. Pour half of the batter into the skillet, spreading it evenly to form a thin layer.
  5. Cook for about 5-7 minutes until the bottom is golden brown and crispy.
  6. Flip the cake carefully, then crack one egg on top and cover the skillet to let it cook for another 3-4 minutes until the egg is set.
  7. Remove the cake from the skillet and repeat the process with the remaining batter and egg.
  8. Cut the cakes into squares and serve warm with soy sauce for dipping.
