- Tapioca flour - 50 grams
- Water - 300 ml
- Salt - 1/2 teaspoon
- Shrimp (peeled and deveined) - 150 grams
- Green onions (chopped) - 2 tablespoons
- Vegetable oil - 4 tablespoons
- Black pepper - 1/4 teaspoon
- Chili sauce (for serving) - to taste
Steps
- In a bowl, mix rice flour, tapioca flour, salt, and water until a smooth batter forms.
- Let the batter rest for 10 minutes to thicken.
- In a non-stick skillet, heat 2 tablespoons of vegetable oil over medium heat.
- Add the shrimp and cook until pink and opaque, about 3-4 minutes. Set aside.
- In the same skillet, pour half of the batter and spread it evenly to form a pancake.
- Cook for about 5 minutes until the bottom is golden brown, then flip carefully to cook the other side for another 3-4 minutes.
- Once cooked, remove from the skillet and repeat with the remaining batter to make another pancake.
- Incorporate the cooked shrimp and chopped green onions onto the pancake and fold it in half.
- Serve hot with chili sauce on the side for dipping.
