Ingredients

  • Rice flour - 100 grams
  • Tapioca flour - 50 grams
  • Water - 300 ml
  • Salt - 1/2 teaspoon
  • Shrimp (peeled and deveined) - 150 grams
  • Green onions (chopped) - 2 tablespoons
  • Vegetable oil - 4 tablespoons
  • Black pepper - 1/4 teaspoon
  • Chili sauce (for serving) - to taste

Steps

  1. In a bowl, mix rice flour, tapioca flour, salt, and water until a smooth batter forms.
  2. Let the batter rest for 10 minutes to thicken.
  3. In a non-stick skillet, heat 2 tablespoons of vegetable oil over medium heat.
  4. Add the shrimp and cook until pink and opaque, about 3-4 minutes. Set aside.
  5. In the same skillet, pour half of the batter and spread it evenly to form a pancake.
  6. Cook for about 5 minutes until the bottom is golden brown, then flip carefully to cook the other side for another 3-4 minutes.
  7. Once cooked, remove from the skillet and repeat with the remaining batter to make another pancake.
  8. Incorporate the cooked shrimp and chopped green onions onto the pancake and fold it in half.
  9. Serve hot with chili sauce on the side for dipping.
