- Tapioca flour - 50 grams
- Water - 300 milliliters
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Vegetable oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Green onion - 2 stalks, chopped
- Carrot - 1 small, grated
- Mushrooms - 100 grams, chopped
- Soy sauce - 1 tablespoon
- Fresh cilantro - 2 tablespoons, chopped
- Chili sauce - for serving
Steps
- Preheat the oven to 200°C (390°F).
- In a mixing bowl, combine the rice flour, tapioca flour, water, salt, and black pepper to create a smooth batter.
- Heat 1 tablespoon of vegetable oil in a non-stick skillet over medium heat. Add the minced garlic and sauté until fragrant.
- Add the chopped mushrooms and grated carrot to the skillet, cooking until softened. Stir in the soy sauce and chopped green onions, then remove from heat.
- Fold the sautéed mixture into the batter, adding the fresh cilantro as well.
- Grease a baking dish with the remaining tablespoon of vegetable oil. Pour the batter into the dish, spreading it evenly.
- Bake in the preheated oven for 25-30 minutes, or until the top is golden brown and the edges are crispy.
- Remove from the oven and let it cool for a few minutes. Cut into squares and serve with chili sauce on the side.
