Ingredients
- Rice flour - 100 grams
- Tapioca starch - 30 grams
- Water - 200 ml
- Shrimp (peeled and deveined) - 100 grams
- Squid (cleaned and sliced) - 100 grams
- Garlic (minced) - 2 cloves
- Spring onions (chopped) - 2 stalks
- Eggs - 2 large
- Vegetable oil - 4 tablespoons
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Red chili (sliced) - 1 (optional for garnish)
- Soy sauce - 2 tablespoons (Halal certified)
- Lime wedges - for serving
Steps
- In a mixing bowl, combine the rice flour, tapioca starch, and salt. Gradually add water while stirring until the mixture is smooth and thick.
- Pour the batter into a greased steaming dish or a shallow pan and steam for about 15 minutes until set. Allow it to cool before cutting it into squares.
- In a skillet, heat 2 tablespoons of vegetable oil over medium heat. Add minced garlic and stir-fry until fragrant.
- Add shrimp and squid to the skillet, cooking until they are opaque and cooked through, about 3-4 minutes. Season with black pepper and set aside.
- In the same skillet, add another 2 tablespoons of oil. Turn the heat to high and add the steamed rice flour squares. Fry until golden and crispy on both sides, about 3-4 minutes per side.
- Push the crispy squares to one side of the skillet and crack the eggs into the empty space. Scramble the eggs until cooked, then mix everything together.
- Add the cooked seafood and chopped spring onions, stirring to combine all ingredients. Adjust seasoning if necessary.
- Serve hot, garnished with sliced red chili and a side of lime wedges and soy sauce for dipping.
