Ingredients

  • Rice flour - 100 grams
  • Tapioca starch - 30 grams
  • Water - 200 ml
  • Shrimp (peeled and deveined) - 100 grams
  • Squid (cleaned and sliced) - 100 grams
  • Garlic (minced) - 2 cloves
  • Spring onions (chopped) - 2 stalks
  • Eggs - 2 large
  • Vegetable oil - 4 tablespoons
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Red chili (sliced) - 1 (optional for garnish)
  • Soy sauce - 2 tablespoons (Halal certified)
  • Lime wedges - for serving

Steps

  1. In a mixing bowl, combine the rice flour, tapioca starch, and salt. Gradually add water while stirring until the mixture is smooth and thick.
  2. Pour the batter into a greased steaming dish or a shallow pan and steam for about 15 minutes until set. Allow it to cool before cutting it into squares.
  3. In a skillet, heat 2 tablespoons of vegetable oil over medium heat. Add minced garlic and stir-fry until fragrant.
  4. Add shrimp and squid to the skillet, cooking until they are opaque and cooked through, about 3-4 minutes. Season with black pepper and set aside.
  5. In the same skillet, add another 2 tablespoons of oil. Turn the heat to high and add the steamed rice flour squares. Fry until golden and crispy on both sides, about 3-4 minutes per side.
  6. Push the crispy squares to one side of the skillet and crack the eggs into the empty space. Scramble the eggs until cooked, then mix everything together.
  7. Add the cooked seafood and chopped spring onions, stirring to combine all ingredients. Adjust seasoning if necessary.
  8. Serve hot, garnished with sliced red chili and a side of lime wedges and soy sauce for dipping.
