- Tapioca starch - 50g
- Water - 300ml
- Salt - 1/2 tsp
- Pepper - 1/4 tsp
- Egg - 1 large
- Green onion - 2 stalks, finely chopped
- Vegetable oil - 2 tbsp (for frying)
- Lettuce leaves - 2
- Cucumber - 1/2, sliced
- Tomato - 1, sliced
- Cilantro - a handful, for garnish
- Chili sauce - 2 tbsp (optional)
- Soy sauce - 1 tbsp (gluten-free)
Steps
- In a mixing bowl, combine rice flour, tapioca starch, water, salt, and pepper. Whisk until smooth.
- Pour the mixture into a lightly greased non-stick pan and cook over medium heat for about 10 minutes, or until the edges lift and the bottom is golden brown.
- Flip the rice cake carefully and cook the other side for another 5 minutes until golden brown. Remove from heat and let cool slightly.
- Once cooled, cut the rice cake into burger-sized rounds (approximately 10 cm in diameter).
- In a small bowl, beat the egg and mix in the chopped green onions.
- Heat 1 tablespoon of vegetable oil in a pan over medium heat. Dip each rice cake round in the egg mixture and pan-fry for 2-3 minutes on each side until crispy.
- Assemble the burger by placing a fried rice cake on a plate, then top with lettuce, tomato slices, cucumber, and cilantro. Drizzle with chili sauce and soy sauce if desired.
- Top with another fried rice cake to complete the burger and serve immediately.
