Ingredients

  • Rice flour - 100g
  • Tapioca starch - 50g
  • Water - 300ml
  • Salt - 1/2 tsp
  • Pepper - 1/4 tsp
  • Egg - 1 large
  • Green onion - 2 stalks, finely chopped
  • Vegetable oil - 2 tbsp (for frying)
  • Lettuce leaves - 2
  • Cucumber - 1/2, sliced
  • Tomato - 1, sliced
  • Cilantro - a handful, for garnish
  • Chili sauce - 2 tbsp (optional)
  • Soy sauce - 1 tbsp (gluten-free)

Steps

  1. In a mixing bowl, combine rice flour, tapioca starch, water, salt, and pepper. Whisk until smooth.
  2. Pour the mixture into a lightly greased non-stick pan and cook over medium heat for about 10 minutes, or until the edges lift and the bottom is golden brown.
  3. Flip the rice cake carefully and cook the other side for another 5 minutes until golden brown. Remove from heat and let cool slightly.
  4. Once cooled, cut the rice cake into burger-sized rounds (approximately 10 cm in diameter).
  5. In a small bowl, beat the egg and mix in the chopped green onions.
  6. Heat 1 tablespoon of vegetable oil in a pan over medium heat. Dip each rice cake round in the egg mixture and pan-fry for 2-3 minutes on each side until crispy.
  7. Assemble the burger by placing a fried rice cake on a plate, then top with lettuce, tomato slices, cucumber, and cilantro. Drizzle with chili sauce and soy sauce if desired.
  8. Top with another fried rice cake to complete the burger and serve immediately.
