Steps
- In a mixing bowl, combine rice flour, tapioca starch, baking powder, and salt.
- In another bowl, whisk together coconut milk, water, and the egg until well combined.
- Gradually add the wet ingredients to the dry ingredients, stirring until a smooth batter forms.
- Grease a round cake pan or pizza pan, and pour the batter into it evenly.
- Steam the batter over boiling water for about 20 minutes until set and firm.
- Once the base is cooked, preheat your oven to 200°C (390°F).
- Spread shredded chicken evenly over the top of the steamed base.
- Sprinkle mozzarella cheese, diced red bell pepper, and chopped green onions over the chicken.
