Ingredients

  • Rice flour - 100 grams
  • Tapioca starch - 25 grams
  • Water - 300 milliliters
  • Ground pork - 150 grams
  • Fish sauce - 15 milliliters
  • Garlic - 2 cloves, minced
  • Green onions - 2 stalks, finely chopped
  • Eggs - 2 large
  • Vegetable oil - 15 milliliters
  • Fresh herbs (mint, cilantro) - 20 grams each, chopped
  • Chili sauce - to taste

Steps

  1. In a bowl, mix the rice flour, tapioca starch, and water to create a smooth batter. Let it rest for 10 minutes.
  2. In a skillet, heat the vegetable oil over medium heat. Add the minced garlic and ground pork, stirring until the pork is cooked through.
  3. Stir in fish sauce and half of the green onions into the pork mixture. Remove from heat.
  4. In a separate bowl, whisk the eggs and season with a pinch of salt.
  5. Heat a non-stick pan on medium heat. Pour a small amount of the batter into the pan, swirling to create a thin pancake. Cook for about 2-3 minutes until the edges lift.
  6. Add a spoonful of the pork mixture onto the pancake, then pour a little whisked egg on top. Cover with a lid and cook for another 2-3 minutes until the egg is set.
  7. Repeat with the remaining batter and filling, stacking the pancakes as you go.
  8. Serve the Bánh Bèo Thịt hot, garnished with fresh herbs, the remaining green onions, and a drizzle of chili sauce.
