- Green onions - 2 stalks, finely chopped
- Eggs - 2 large
- Vegetable oil - 15 milliliters
- Fresh herbs (mint, cilantro) - 20 grams each, chopped
- Chili sauce - to taste
Steps
- In a bowl, mix the rice flour, tapioca starch, and water to create a smooth batter. Let it rest for 10 minutes.
- In a skillet, heat the vegetable oil over medium heat. Add the minced garlic and ground pork, stirring until the pork is cooked through.
- Stir in fish sauce and half of the green onions into the pork mixture. Remove from heat.
- In a separate bowl, whisk the eggs and season with a pinch of salt.
- Heat a non-stick pan on medium heat. Pour a small amount of the batter into the pan, swirling to create a thin pancake. Cook for about 2-3 minutes until the edges lift.
- Add a spoonful of the pork mixture onto the pancake, then pour a little whisked egg on top. Cover with a lid and cook for another 2-3 minutes until the egg is set.
- Repeat with the remaining batter and filling, stacking the pancakes as you go.
- Serve the Bánh Bèo Thịt hot, garnished with fresh herbs, the remaining green onions, and a drizzle of chili sauce.
