- Protein powder (unflavored) - 30g
- Water - 250ml
- Eggs - 2 large
- Bok choy (finely chopped) - 50g
- Carrot (grated) - 50g
- Green onion (sliced) - 30g
- Shrimp (peeled and diced) - 100g
- Fish sauce - 1 tablespoon
- Soy sauce - 1 tablespoon
- Black pepper - 1/2 teaspoon
- Oil (for cooking) - 1 tablespoon
- Fresh cilantro (for garnish) - 10g
Steps
- In a mixing bowl, combine brown rice flour and protein powder. Gradually whisk in water until a smooth batter forms.
- In a separate bowl, beat the eggs and mix in the chopped bok choy, grated carrot, sliced green onion, diced shrimp, fish sauce, soy sauce, and black pepper.
- Heat a non-stick skillet over medium heat and add oil. Pour a ladle of the batter into the skillet, swirling it to create a thin layer.
- Immediately add a spoonful of the egg and shrimp mixture on top of the batter.
- Cook for about 3-4 minutes until the edges start to lift and the bottom is golden brown. Carefully flip and cook for another 2-3 minutes.
- Remove from the skillet and repeat with the remaining batter and mixture.
- Serve hot, garnished with fresh cilantro.
