Ingredients

  • Brown rice flour - 100g
  • Protein powder (unflavored) - 30g
  • Water - 250ml
  • Eggs - 2 large
  • Bok choy (finely chopped) - 50g
  • Carrot (grated) - 50g
  • Green onion (sliced) - 30g
  • Shrimp (peeled and diced) - 100g
  • Fish sauce - 1 tablespoon
  • Soy sauce - 1 tablespoon
  • Black pepper - 1/2 teaspoon
  • Oil (for cooking) - 1 tablespoon
  • Fresh cilantro (for garnish) - 10g

Steps

  1. In a mixing bowl, combine brown rice flour and protein powder. Gradually whisk in water until a smooth batter forms.
  2. In a separate bowl, beat the eggs and mix in the chopped bok choy, grated carrot, sliced green onion, diced shrimp, fish sauce, soy sauce, and black pepper.
  3. Heat a non-stick skillet over medium heat and add oil. Pour a ladle of the batter into the skillet, swirling it to create a thin layer.
  4. Immediately add a spoonful of the egg and shrimp mixture on top of the batter.
  5. Cook for about 3-4 minutes until the edges start to lift and the bottom is golden brown. Carefully flip and cook for another 2-3 minutes.
  6. Remove from the skillet and repeat with the remaining batter and mixture.
  7. Serve hot, garnished with fresh cilantro.
