Ingredients

  • Rice flour - 100 grams
  • Tapioca starch - 50 grams
  • Water - 300 ml
  • Salt - 1/2 teaspoon
  • Olive oil - 1 tablespoon
  • Cherry tomatoes - 100 grams, halved
  • Bell pepper - 1 medium, diced
  • Mushrooms - 100 grams, sliced
  • Spinach - 50 grams, chopped
  • Vegan mozzarella cheese - 100 grams
  • Soy sauce - 1 tablespoon
  • Chili flakes - 1/2 teaspoon
  • Fresh cilantro - for garnish

Steps

  1. In a mixing bowl, combine rice flour, tapioca starch, salt, and water. Whisk until smooth and set aside to rest for 15 minutes.
  2. Prepare a steamer and bring water to a boil. Lightly grease small round molds or ramekins with olive oil.
  3. Pour the batter into the molds, filling them about halfway. Steam for 10-12 minutes until the cakes are set and firm.
  4. In a skillet, heat a tablespoon of olive oil over medium heat. Add the diced bell pepper, sliced mushrooms, and halved cherry tomatoes. Sauté for 5-7 minutes until softened.
  5. Add the chopped spinach and soy sauce to the skillet, and cook for another 2-3 minutes until the spinach wilts. Season with chili flakes to taste.
  6. Once the rice cakes are done, remove them from the molds and place them on a baking sheet. Preheat your oven to 200°C (400°F).
  7. Top each rice cake with the sautéed vegetable mixture and sprinkle vegan mozzarella cheese on top.
  8. Bake in the preheated oven for 10 minutes until the cheese is melted and bubbly.
