- Rice flour - 100 grams
- Tapioca starch - 30 grams
- Water - 300 ml
- Shrimp - 100 grams, peeled and deveined
- Green onions - 2 tablespoons, finely chopped
- Fish sauce - 1 tablespoon
- Vegetable oil - 1 tablespoon
- Lettuce leaves - 2 large, for serving
- Mint leaves - a handful, for garnish
- Chili sauce - to taste
Steps
- In a mixing bowl, combine rice flour, tapioca starch, and water to create a smooth batter. Let it rest for 15 minutes.
- While the batter rests, prepare the shrimp by marinating them with fish sauce and half of the chopped green onions.
- Heat a non-stick steamer or pot with water and bring it to a boil. Grease small ramekins or shallow dishes with vegetable oil.
- Pour a thin layer of the batter into each ramekin and place a few marinated shrimp on top. Steam for about 5-7 minutes until the cakes are set.
- Once steamed, remove the ramekins from the steamer and let them cool slightly. Repeat the process with the remaining batter and shrimp.
- To serve, place the steamed rice cakes on a plate, garnish with the remaining green onions, mint leaves, and serve with lettuce leaves and chili sauce on the side.
