Ingredients

  • Rice flour - 100 grams
  • Tapioca starch - 50 grams
  • Coconut milk - 200 ml
  • Water - 100 ml
  • Sugar - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Baking powder - 1 teaspoon
  • Vegetable oil - 2 tablespoons
  • Bell pepper (red, finely chopped) - 50 grams
  • Carrot (grated) - 50 grams
  • Green onions (sliced) - 30 grams
  • Fresh cilantro (chopped) - 20 grams
  • Soy sauce - 1 tablespoon

Steps

  1. In a mixing bowl, combine rice flour, tapioca starch, baking powder, sugar, and salt.
  2. Gradually add coconut milk and water to the dry mixture, stirring until smooth and well combined.
  3. Let the batter rest for about 10 minutes while you prepare the toppings.
  4. In a skillet, heat 1 tablespoon of vegetable oil over medium heat and sauté the bell pepper and carrot for 3-4 minutes until slightly softened.
  5. Add green onions and cilantro to the skillet, cooking for an additional 1-2 minutes. Remove from heat.
  6. Preheat a non-stick skillet over low to medium heat and add the remaining tablespoon of vegetable oil.
  7. Pour half of the batter into the skillet, spreading it evenly to form a base.
  8. Cook for about 5-7 minutes until the bottom is set and lightly golden.
  9. Spread half of the sautéed vegetable mixture on top of the batter.
  10. Cover the skillet and cook for another 5-7 minutes until the top is cooked through and firm.
  11. Carefully flip the bánh and cook for another 2-3 minutes on the other side.
  12. Repeat the process with the remaining batter and vegetables to make the second bánh.
  13. Serve hot, drizzled with soy sauce.
