- Coconut milk - 200 ml
- Water - 100 ml
- Sugar - 1 tablespoon
- Salt - 1/2 teaspoon
- Baking powder - 1 teaspoon
- Vegetable oil - 2 tablespoons
- Bell pepper (red, finely chopped) - 50 grams
- Carrot (grated) - 50 grams
- Green onions (sliced) - 30 grams
- Fresh cilantro (chopped) - 20 grams
- Soy sauce - 1 tablespoon
Steps
- In a mixing bowl, combine rice flour, tapioca starch, baking powder, sugar, and salt.
- Gradually add coconut milk and water to the dry mixture, stirring until smooth and well combined.
- Let the batter rest for about 10 minutes while you prepare the toppings.
- In a skillet, heat 1 tablespoon of vegetable oil over medium heat and sauté the bell pepper and carrot for 3-4 minutes until slightly softened.
- Add green onions and cilantro to the skillet, cooking for an additional 1-2 minutes. Remove from heat.
- Preheat a non-stick skillet over low to medium heat and add the remaining tablespoon of vegetable oil.
- Pour half of the batter into the skillet, spreading it evenly to form a base.
- Cook for about 5-7 minutes until the bottom is set and lightly golden.
- Spread half of the sautéed vegetable mixture on top of the batter.
- Cover the skillet and cook for another 5-7 minutes until the top is cooked through and firm.
- Carefully flip the bánh and cook for another 2-3 minutes on the other side.
- Repeat the process with the remaining batter and vegetables to make the second bánh.
- Serve hot, drizzled with soy sauce.
