- Shirataki noodles - 200 grams
- Chicken breast - 200 grams, sliced thinly
- Bell pepper - 1 medium, julienned
- Carrot - 1 medium, julienned
- Zucchini - 1 medium, julienned
- Garlic - 2 cloves, minced
- Soy sauce - 2 tablespoons (low sodium)
- Fish sauce - 1 tablespoon
- Olive oil - 1 tablespoon
- Black pepper - 1/2 teaspoon
- Green onions - 2 stalks, chopped
- Cilantro - 2 tablespoons, chopped
- Lime - 1, cut into wedges
Steps
- Drain and rinse the Shirataki noodles under cold water, then set aside.
- In a large skillet or wok, heat the olive oil over medium-high heat.
- Add the minced garlic and sauté for about 30 seconds until fragrant.
- Add the sliced chicken breast to the skillet and season with black pepper. Cook until the chicken is no longer pink, about 5-7 minutes.
- Stir in the bell pepper, carrot, and zucchini, and cook for another 3-4 minutes until the vegetables are tender but still crisp.
- Add the Shirataki noodles to the skillet, followed by the soy sauce and fish sauce. Toss everything together and cook for an additional 2-3 minutes until heated through.
- Remove from heat and stir in the chopped green onions and cilantro.
- Serve hot with lime wedges on the side for squeezing over the dish.
