Ingredients

  • Shirataki noodles - 200 grams
  • Chicken breast - 200 grams, sliced thinly
  • Bell pepper - 1 medium, julienned
  • Carrot - 1 medium, julienned
  • Zucchini - 1 medium, julienned
  • Garlic - 2 cloves, minced
  • Soy sauce - 2 tablespoons (low sodium)
  • Fish sauce - 1 tablespoon
  • Olive oil - 1 tablespoon
  • Black pepper - 1/2 teaspoon
  • Green onions - 2 stalks, chopped
  • Cilantro - 2 tablespoons, chopped
  • Lime - 1, cut into wedges

Steps

  1. Drain and rinse the Shirataki noodles under cold water, then set aside.
  2. In a large skillet or wok, heat the olive oil over medium-high heat.
  3. Add the minced garlic and sauté for about 30 seconds until fragrant.
  4. Add the sliced chicken breast to the skillet and season with black pepper. Cook until the chicken is no longer pink, about 5-7 minutes.
  5. Stir in the bell pepper, carrot, and zucchini, and cook for another 3-4 minutes until the vegetables are tender but still crisp.
  6. Add the Shirataki noodles to the skillet, followed by the soy sauce and fish sauce. Toss everything together and cook for an additional 2-3 minutes until heated through.
  7. Remove from heat and stir in the chopped green onions and cilantro.
  8. Serve hot with lime wedges on the side for squeezing over the dish.
