Ingredients

  • Rice vermicelli - 200 grams
  • Pork tenderloin - 300 grams, thinly sliced
  • Soy sauce - 2 tablespoons
  • Fish sauce - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Shallots - 2, thinly sliced
  • Bell pepper - 1, sliced
  • Carrot - 1, julienned
  • Green onions - 2, chopped
  • Vegetable oil - 2 tablespoons
  • Black pepper - 1/2 teaspoon
  • Fresh cilantro - for garnish
  • Lime - 1, cut into wedges

Steps

  1. Soak the rice vermicelli in hot water for about 10 minutes, or until soft, then drain and set aside.
  2. In a bowl, combine the sliced pork with soy sauce, fish sauce, minced garlic, black pepper, and half of the sliced shallots. Marinate for at least 15 minutes.
  3. Heat 1 tablespoon of vegetable oil in a pan over medium-high heat. Add the marinated pork and stir-fry for about 5-7 minutes until cooked through. Remove the pork and set aside.
  4. In the same pan, add another tablespoon of vegetable oil. Stir-fry the remaining shallots, bell pepper, and carrots for about 3-4 minutes until slightly tender.
  5. Add the cooked pork back into the pan with the vegetables and toss everything together for another 2 minutes.
  6. Serve the stir-fried pork and vegetables over the drained rice vermicelli, garnished with chopped green onions and fresh cilantro. Serve lime wedges on the side.
