- Spring roll wrappers - 8 pieces
- Shrimp, cooked and chopped - 100 grams
- Carrot, shredded - 1/2 medium
- Cabbage, shredded - 1/2 cup
- Fresh herbs (mint, cilantro, basil) - 1 cup total
- Lettuce leaves - 4 large
- Peanut, crushed - 2 tablespoons
- Lime wedges - 1 lime
Steps
- Prepare the marinade by combining minced garlic, shallots, soy sauce, fish sauce, sugar, black pepper, and vegetable oil in a bowl. Add the sliced pork and marinate for at least 30 minutes.
- While the pork is marinating, prepare the spring rolls. In a bowl, mix the chopped shrimp, shredded carrot, and cabbage.
- Soak each spring roll wrapper in water until soft, then place a spoonful of the shrimp mixture in the center. Roll tightly, folding in the sides to seal. Repeat for all wrappers.
- Heat oil in a pan over medium heat. Fry the spring rolls until golden brown and crispy, then drain on paper towels.
- Cook the rice vermicelli according to package instructions, then drain and rinse under cold water.
- Grill the marinated pork on a preheated grill or pan until cooked through, about 5-7 minutes per side.
