  • Spring roll wrappers - 8 pieces
  • Shrimp, cooked and chopped - 100 grams
  • Carrot, shredded - 1/2 medium
  • Cabbage, shredded - 1/2 cup
  • Fresh herbs (mint, cilantro, basil) - 1 cup total
  • Lettuce leaves - 4 large
  • Peanut, crushed - 2 tablespoons
  • Lime wedges - 1 lime

Steps

  1. Prepare the marinade by combining minced garlic, shallots, soy sauce, fish sauce, sugar, black pepper, and vegetable oil in a bowl. Add the sliced pork and marinate for at least 30 minutes.
  2. While the pork is marinating, prepare the spring rolls. In a bowl, mix the chopped shrimp, shredded carrot, and cabbage.
  3. Soak each spring roll wrapper in water until soft, then place a spoonful of the shrimp mixture in the center. Roll tightly, folding in the sides to seal. Repeat for all wrappers.
  4. Heat oil in a pan over medium heat. Fry the spring rolls until golden brown and crispy, then drain on paper towels.
  5. Cook the rice vermicelli according to package instructions, then drain and rinse under cold water.
