Ingredients

  • Rice vermicelli noodles - 150 grams
  • Pork shoulder (halal) - 200 grams
  • Garlic - 2 cloves, minced
  • Shallot - 1, finely chopped
  • Fish sauce (halal) - 2 tablespoons
  • Soy sauce (halal) - 1 tablespoon
  • Brown sugar - 1 tablespoon
  • Lime juice - 1 tablespoon
  • Black pepper - 1/2 teaspoon
  • Vegetable oil - 1 tablespoon
  • Cucumber - 1/2, julienned
  • Carrot - 1 small, julienned
  • Fresh mint leaves - 10 grams
  • Fresh cilantro - 10 grams
  • Chili pepper - 1, sliced (optional)
  • Roasted peanuts - 30 grams, crushed
  • Lettuce leaves - 2

Steps

  1. Cook the rice vermicelli noodles according to package instructions, then drain and set aside.
  2. In a bowl, combine minced garlic, chopped shallot, fish sauce, soy sauce, brown sugar, lime juice, black pepper, and vegetable oil to create a marinade.
  3. Slice the pork shoulder into thin strips and marinate it in the mixture for at least 15 minutes.
  4. While the pork marinates, prepare the vegetables: julienne the cucumber and carrot, and wash the mint and cilantro leaves.
  5. Preheat a grill or frying pan over medium-high heat and cook the marinated pork for about 3-4 minutes on each side until fully cooked and slightly charred.
  6. To assemble, place a bed of cooked rice vermicelli in each bowl, top with grilled pork, and arrange the cucumber, carrot, and lettuce around it.
  7. Garnish with fresh mint, cilantro, sliced chili pepper, and a sprinkle of crushed roasted peanuts.
  8. Serve with additional lime wedges and fish sauce on the side for drizzling.
