- Pork shoulder (halal) - 200 grams
- Garlic - 2 cloves, minced
- Shallot - 1, finely chopped
- Fish sauce (halal) - 2 tablespoons
- Soy sauce (halal) - 1 tablespoon
- Brown sugar - 1 tablespoon
- Lime juice - 1 tablespoon
- Black pepper - 1/2 teaspoon
- Vegetable oil - 1 tablespoon
- Cucumber - 1/2, julienned
- Carrot - 1 small, julienned
- Fresh mint leaves - 10 grams
- Fresh cilantro - 10 grams
- Chili pepper - 1, sliced (optional)
- Roasted peanuts - 30 grams, crushed
- Lettuce leaves - 2
Steps
- Cook the rice vermicelli noodles according to package instructions, then drain and set aside.
- In a bowl, combine minced garlic, chopped shallot, fish sauce, soy sauce, brown sugar, lime juice, black pepper, and vegetable oil to create a marinade.
- Slice the pork shoulder into thin strips and marinate it in the mixture for at least 15 minutes.
- While the pork marinates, prepare the vegetables: julienne the cucumber and carrot, and wash the mint and cilantro leaves.
- Preheat a grill or frying pan over medium-high heat and cook the marinated pork for about 3-4 minutes on each side until fully cooked and slightly charred.
- To assemble, place a bed of cooked rice vermicelli in each bowl, top with grilled pork, and arrange the cucumber, carrot, and lettuce around it.
- Garnish with fresh mint, cilantro, sliced chili pepper, and a sprinkle of crushed roasted peanuts.
- Serve with additional lime wedges and fish sauce on the side for drizzling.
