- Black pepper - 1 teaspoon
- Lemongrass - 1 stalk, finely chopped
- Chicken broth - 500 ml
- Fresh mint leaves - 30 grams
- Cilantro - 30 grams
- Lime - 1, cut into wedges
- Chili peppers - 1, sliced (optional)
- Peanuts - 30 grams, crushed (for garnish)
Steps
- In a bowl, combine dog meat with fish sauce, soy sauce, sugar, garlic, shallots, ginger, black pepper, and lemongrass. Marinate for at least 30 minutes.
- While the meat is marinating, cook the rice vermicelli noodles according to package instructions, then drain and rinse under cold water to stop cooking. Set aside.
- In a pot, bring chicken broth to a simmer over medium heat. Add the marinated dog meat and cook for about 15-20 minutes, until the meat is tender and cooked through.
- To serve, place a portion of the vermicelli noodles in a bowl. Ladle the broth and dog meat over the noodles.
- Garnish with fresh mint, cilantro, crushed peanuts, and sliced chili peppers if desired. Serve with lime wedges on the side.
