  • Sugar - 1 tablespoon
  • Garlic - 3 cloves, minced
  • Shallots - 2, finely sliced
  • Ginger - 1 tablespoon, minced
  • Black pepper - 1 teaspoon
  • Lemongrass - 1 stalk, finely chopped
  • Chicken broth - 500 ml
  • Fresh mint leaves - 30 grams
  • Cilantro - 30 grams
  • Lime - 1, cut into wedges
  • Chili peppers - 1, sliced (optional)
  • Peanuts - 30 grams, crushed (for garnish)

Steps

  1. In a bowl, combine dog meat with fish sauce, soy sauce, sugar, garlic, shallots, ginger, black pepper, and lemongrass. Marinate for at least 30 minutes.
  2. While the meat is marinating, cook the rice vermicelli noodles according to package instructions, then drain and rinse under cold water to stop cooking. Set aside.
  3. In a pot, bring chicken broth to a simmer over medium heat. Add the marinated dog meat and cook for about 15-20 minutes, until the meat is tender and cooked through.
  4. To serve, place a portion of the vermicelli noodles in a bowl. Ladle the broth and dog meat over the noodles.
  5. Garnish with fresh mint, cilantro, crushed peanuts, and sliced chili peppers if desired. Serve with lime wedges on the side.
