Ingredients

  • Firm tofu - 200 grams, cubed

  • Garlic - 3 cloves, minced
  • Shallots - 2, thinly sliced
  • Fish sauce - 2 tablespoons
  • Coconut aminos - 1 tablespoon
  • Fresh cilantro - 20 grams, chopped
  • Mint leaves - 20 grams, chopped
  • Lime - 1, juiced
  • Chili flakes - 1 teaspoon
  • Salt - to taste
  • Pepper - to taste

Steps

  1. Cook the rice noodles according to package instructions, then drain and set aside.
  2. In a large skillet, heat the coconut oil over medium heat. Add the sliced shallots and sauté until translucent, about 3 minutes.
  3. Add the minced garlic and cook for another minute until fragrant.
  4. Carefully add the cubed tofu to the skillet and cook for 5-7 minutes, turning occasionally until golden brown on all sides.
  5. Drizzle the fish sauce and coconut aminos over the tofu, stirring to coat evenly. Cook for an additional 2 minutes.
  6. Season with salt, pepper, and chili flakes to taste.
  7. In a bowl, combine the cooked rice noodles, sautéed tofu, fresh cilantro, and mint leaves. Squeeze lime juice over the top and toss gently to mix.
