- Firm tofu - 200 grams, cubed

- Garlic - 3 cloves, minced
- Shallots - 2, thinly sliced
- Fish sauce - 2 tablespoons
- Coconut aminos - 1 tablespoon
- Fresh cilantro - 20 grams, chopped
- Mint leaves - 20 grams, chopped
- Lime - 1, juiced
- Chili flakes - 1 teaspoon
- Salt - to taste
- Pepper - to taste
Steps
- Cook the rice noodles according to package instructions, then drain and set aside.
- In a large skillet, heat the coconut oil over medium heat. Add the sliced shallots and sauté until translucent, about 3 minutes.
- Add the minced garlic and cook for another minute until fragrant.
- Carefully add the cubed tofu to the skillet and cook for 5-7 minutes, turning occasionally until golden brown on all sides.
- Drizzle the fish sauce and coconut aminos over the tofu, stirring to coat evenly. Cook for an additional 2 minutes.
- Season with salt, pepper, and chili flakes to taste.
- In a bowl, combine the cooked rice noodles, sautéed tofu, fresh cilantro, and mint leaves. Squeeze lime juice over the top and toss gently to mix.
