Ingredients
- Rice vermicelli noodles - 100 grams
- Tofu (firm) - 150 grams, cubed
- Carrot - 1 medium, julienned
- Cucumber - 1 medium, julienned
- Bell pepper (red or yellow) - 1 medium, sliced
- Fresh mint leaves - 10 grams, chopped
- Cilantro - 10 grams, chopped
- Lime - 1, juiced
- Soy sauce - 2 tablespoons
- Sesame oil - 1 tablespoon
- Garlic - 2 cloves, minced
- Chili garlic sauce - 1 teaspoon (optional)
- Peanuts (crushed) - 20 grams, for garnish
- Salt - to taste
Steps
- Cook the rice vermicelli noodles in boiling water for 3-4 minutes or until tender. Drain and rinse under cold water to stop cooking. Set aside.
- In a medium pan, heat sesame oil over medium heat. Add the cubed tofu and cook until golden brown on all sides, about 8-10 minutes. Remove from heat.
- In a large bowl, combine the cooked vermicelli noodles, sautéed tofu, julienned carrot, cucumber, and bell pepper.
- In a small bowl, whisk together soy sauce, lime juice, minced garlic, and chili garlic sauce (if using). Pour over the noodle mixture and toss well to combine.
- Serve immediately, garnished with chopped mint, cilantro, and crushed peanuts. Adjust salt to taste.
