Ingredients

  • Rice vermicelli noodles - 100 grams
  • Tofu (firm) - 150 grams, cubed
  • Carrot - 1 medium, julienned
  • Cucumber - 1 medium, julienned
  • Bell pepper (red or yellow) - 1 medium, sliced
  • Fresh mint leaves - 10 grams, chopped
  • Cilantro - 10 grams, chopped
  • Lime - 1, juiced
  • Soy sauce - 2 tablespoons
  • Sesame oil - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Chili garlic sauce - 1 teaspoon (optional)
  • Peanuts (crushed) - 20 grams, for garnish
  • Salt - to taste

Steps

  1. Cook the rice vermicelli noodles in boiling water for 3-4 minutes or until tender. Drain and rinse under cold water to stop cooking. Set aside.
  2. In a medium pan, heat sesame oil over medium heat. Add the cubed tofu and cook until golden brown on all sides, about 8-10 minutes. Remove from heat.
  3. In a large bowl, combine the cooked vermicelli noodles, sautéed tofu, julienned carrot, cucumber, and bell pepper.
  4. In a small bowl, whisk together soy sauce, lime juice, minced garlic, and chili garlic sauce (if using). Pour over the noodle mixture and toss well to combine.
  5. Serve immediately, garnished with chopped mint, cilantro, and crushed peanuts. Adjust salt to taste.
