Ingredients
- Shrimp - 300g, peeled and deveined
- Zucchini - 1 medium, spiralized
- Garlic - 4 cloves, minced
- Fish sauce - 3 tablespoons
- Lime juice - 2 tablespoons
- Coconut sugar - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Olive oil - 2 tablespoons
- Fresh cilantro - 2 tablespoons, chopped
- Chili flakes - 1/4 teaspoon (optional)
Steps
- In a bowl, combine shrimp, 2 tablespoons of fish sauce, lime juice, coconut sugar, black pepper, and 1 tablespoon of olive oil. Marinate for 15 minutes.
- While the shrimp is marinating, prepare the dipping sauce by mixing the remaining fish sauce, minced garlic, lime juice, and chili flakes in a small bowl. Set aside.
- Heat a grill or grill pan over medium heat. Add the marinated shrimp and grill for about 2-3 minutes on each side until they are fully cooked and have nice grill marks.
- In a separate pan, lightly sauté the spiralized zucchini in the remaining olive oil for about 2-3 minutes until just tender. Season with a pinch of salt.
- To serve, divide the spiralized zucchini onto two plates, top with grilled shrimp, and drizzle with the garlic dipping sauce. Garnish with chopped cilantro.
