Ingredients

  • Shrimp - 300g, peeled and deveined
  • Zucchini - 1 medium, spiralized
  • Garlic - 4 cloves, minced
  • Fish sauce - 3 tablespoons
  • Lime juice - 2 tablespoons
  • Coconut sugar - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Olive oil - 2 tablespoons
  • Fresh cilantro - 2 tablespoons, chopped
  • Chili flakes - 1/4 teaspoon (optional)

Steps

  1. In a bowl, combine shrimp, 2 tablespoons of fish sauce, lime juice, coconut sugar, black pepper, and 1 tablespoon of olive oil. Marinate for 15 minutes.
  2. While the shrimp is marinating, prepare the dipping sauce by mixing the remaining fish sauce, minced garlic, lime juice, and chili flakes in a small bowl. Set aside.
  3. Heat a grill or grill pan over medium heat. Add the marinated shrimp and grill for about 2-3 minutes on each side until they are fully cooked and have nice grill marks.
  4. In a separate pan, lightly sauté the spiralized zucchini in the remaining olive oil for about 2-3 minutes until just tender. Season with a pinch of salt.
  5. To serve, divide the spiralized zucchini onto two plates, top with grilled shrimp, and drizzle with the garlic dipping sauce. Garnish with chopped cilantro.
