  • Black pepper - 1 teaspoon
  • Vegetable oil - 1 tablespoon
  • Carrot (julienned) - 1 medium
  • Cucumber (julienned) - 1 medium
  • Fresh mint leaves - 1/2 cup
  • Fresh cilantro - 1/2 cup
  • Crushed peanuts - 2 tablespoons
  • Lime (cut into wedges) - 1

Steps

  1. Cook the vermicelli noodles according to the package instructions, then drain and set aside.
  2. In a mixing bowl, combine shrimp, minced garlic, chopped lemongrass, fish sauce, sugar, black pepper, and vegetable oil. Marinate for at least 15 minutes.
  3. Preheat a grill or grill pan over medium-high heat. Thread the marinated shrimp onto skewers.
  4. Grill the shrimp for about 2-3 minutes on each side, or until they are opaque and cooked through.
  5. To serve, place a portion of vermicelli noodles in a bowl, top with grilled shrimp, and add julienned carrot and cucumber.
  6. Garnish with fresh mint, cilantro, and crushed peanuts. Serve with lime wedges on the side.
