- Sugar - 1 tablespoon
- Black pepper - 1 teaspoon
- Vegetable oil - 1 tablespoon
- Carrot (julienned) - 1 medium
- Cucumber (julienned) - 1 medium
- Fresh mint leaves - 1/2 cup
- Fresh cilantro - 1/2 cup
- Crushed peanuts - 2 tablespoons
- Lime (cut into wedges) - 1
Steps
- Cook the vermicelli noodles according to the package instructions, then drain and set aside.
- In a mixing bowl, combine shrimp, minced garlic, chopped lemongrass, fish sauce, sugar, black pepper, and vegetable oil. Marinate for at least 15 minutes.
- Preheat a grill or grill pan over medium-high heat. Thread the marinated shrimp onto skewers.
- Grill the shrimp for about 2-3 minutes on each side, or until they are opaque and cooked through.
- To serve, place a portion of vermicelli noodles in a bowl, top with grilled shrimp, and add julienned carrot and cucumber.
- Garnish with fresh mint, cilantro, and crushed peanuts. Serve with lime wedges on the side.
