- Almond flour - 50 grams
- Coconut flour - 20 grams
- Fish sauce - 1 tablespoon
- Lime juice - 1 tablespoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Cilantro, chopped - 2 tablespoons
- Green onions, sliced - 2 tablespoons
- Cooking oil (for frying) - 3 tablespoons
Steps
- Begin by preparing the zucchini noodles using a spiralizer or vegetable peeler. Set aside.
- In a bowl, combine shrimp, minced garlic, fish sauce, lime juice, salt, and black pepper. Mix well and let marinate for 10 minutes.
- In another bowl, mix almond flour and coconut flour together. Dredge each marinated shrimp in the flour mixture, shaking off excess.
- Heat cooking oil in a skillet over medium-high heat. Once hot, carefully add the coated shrimp and fry for about 2-3 minutes on each side until golden brown and cooked through. Remove and place on a paper towel to drain excess oil.
- In the same skillet, reduce heat to medium and add zucchini noodles. Sauté for 2-3 minutes until slightly softened but still firm. Season with salt and pepper to taste.
- To serve, place a bed of zucchini noodles on each plate, top with crispy fried shrimp, and garnish with chopped cilantro and sliced green onions.
