  • Egg - 1 large
  • Almond flour - 50 grams
  • Coconut flour - 20 grams
  • Fish sauce - 1 tablespoon
  • Lime juice - 1 tablespoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Cilantro, chopped - 2 tablespoons
  • Green onions, sliced - 2 tablespoons
  • Cooking oil (for frying) - 3 tablespoons

Steps

  1. Begin by preparing the zucchini noodles using a spiralizer or vegetable peeler. Set aside.
  2. In a bowl, combine shrimp, minced garlic, fish sauce, lime juice, salt, and black pepper. Mix well and let marinate for 10 minutes.
  3. In another bowl, mix almond flour and coconut flour together. Dredge each marinated shrimp in the flour mixture, shaking off excess.
  4. Heat cooking oil in a skillet over medium-high heat. Once hot, carefully add the coated shrimp and fry for about 2-3 minutes on each side until golden brown and cooked through. Remove and place on a paper towel to drain excess oil.
  5. In the same skillet, reduce heat to medium and add zucchini noodles. Sauté for 2-3 minutes until slightly softened but still firm. Season with salt and pepper to taste.
  6. To serve, place a bed of zucchini noodles on each plate, top with crispy fried shrimp, and garnish with chopped cilantro and sliced green onions.
