Ingredients

  • Rice vermicelli noodles - 150 grams
  • Large shrimp (peeled and deveined) - 200 grams
  • Garlic (minced) - 2 cloves
  • Fish sauce - 2 tablespoons
  • Lime juice - 1 tablespoon
  • Sugar - 1 teaspoon
  • Vegetable oil - 2 tablespoons
  • Lettuce leaves - 4 large leaves
  • Fresh mint leaves - 1/4 cup
  • Cilantro leaves - 1/4 cup
  • Chili (sliced) - 1 small
  • Crushed peanuts - 2 tablespoons
  • Water - 1 liter

Steps

  1. Soak the rice vermicelli noodles in warm water for about 20 minutes or until softened. Drain and set aside.
  2. In a bowl, mix the minced garlic, fish sauce, lime juice, sugar, and half of the vegetable oil to create a marinade.
  3. Add the shrimp to the marinade and let it sit for about 10 minutes.
  4. Heat the remaining vegetable oil in a skillet over medium heat. Add the marinated shrimp and cook for about 2-3 minutes on each side until they are pink and cooked through. Remove from heat.
  5. Divide the soaked noodles between two bowls and top with the cooked shrimp.
  6. Arrange the lettuce leaves, mint, and cilantro on top of the noodles and shrimp.
  7. Garnish with sliced chili and crushed peanuts.
  8. Serve immediately with extra lime wedges and dipping sauce made from leftover marinade.
