Ingredients
- Pork ribs - 300 grams
- Rice vermicelli - 150 grams
- Onion - 1 medium, sliced
- Garlic - 3 cloves, minced
- Ginger - 1 inch, sliced
- Carrot - 1 medium, julienned
- Daikon radish - 100 grams, julienned
- Fish sauce - 2 tablespoons
- Soy sauce - 1 tablespoon
- Sugar - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Green onion - 2 stalks, chopped
- Fresh herbs (cilantro, mint, basil) - 1 cup, chopped
- Lime - 1, cut into wedges
- Water - 1 liter
Steps
- In a pot, bring 1 liter of water to a boil. Add the pork ribs and cook for 5 minutes to blanch. Remove the ribs and set aside.
- In the same pot, add sliced onion, minced garlic, and ginger. Sauté for 2-3 minutes until fragrant.
- Return the pork ribs to the pot. Add fish sauce, soy sauce, sugar, salt, and black pepper. Cover with water and bring to a simmer.
- Simmer the soup for 30 minutes, skimming off any foam that rises to the surface.
- Add the julienned carrot and daikon radish to the pot and cook for an additional 10 minutes until the vegetables are tender.
- While the soup is simmering, prepare the rice vermicelli according to package instructions. Drain and set aside.
- To serve, place a portion of the cooked rice vermicelli in a bowl, ladle the hot soup over it, and top with chopped green onions and fresh herbs.
- Serve with lime wedges on the side for an extra burst of flavor.
