Ingredients

  • Pork ribs - 300 grams
  • Rice vermicelli - 150 grams
  • Onion - 1 medium, sliced
  • Garlic - 3 cloves, minced
  • Ginger - 1 inch, sliced
  • Carrot - 1 medium, julienned
  • Daikon radish - 100 grams, julienned
  • Fish sauce - 2 tablespoons
  • Soy sauce - 1 tablespoon
  • Sugar - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Green onion - 2 stalks, chopped
  • Fresh herbs (cilantro, mint, basil) - 1 cup, chopped
  • Lime - 1, cut into wedges
  • Water - 1 liter

Steps

  1. In a pot, bring 1 liter of water to a boil. Add the pork ribs and cook for 5 minutes to blanch. Remove the ribs and set aside.
  2. In the same pot, add sliced onion, minced garlic, and ginger. Sauté for 2-3 minutes until fragrant.
  3. Return the pork ribs to the pot. Add fish sauce, soy sauce, sugar, salt, and black pepper. Cover with water and bring to a simmer.
  4. Simmer the soup for 30 minutes, skimming off any foam that rises to the surface.
  5. Add the julienned carrot and daikon radish to the pot and cook for an additional 10 minutes until the vegetables are tender.
  6. While the soup is simmering, prepare the rice vermicelli according to package instructions. Drain and set aside.
  7. To serve, place a portion of the cooked rice vermicelli in a bowl, ladle the hot soup over it, and top with chopped green onions and fresh herbs.
  8. Serve with lime wedges on the side for an extra burst of flavor.
