  • Carrot - 1 medium, julienned
  • Cucumber - 1 small, julienned
  • Fresh mint leaves - 10 grams
  • Fresh cilantro - 10 grams
  • Chili pepper - 1, thinly sliced (optional)
  • Olive oil - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Soak the rice vermicelli in hot water for about 10 minutes or until soft, then drain and set aside.
  2. In a mixing bowl, combine lime juice, fish sauce, honey, minced garlic, salt, and pepper. Whisk together to make the dressing.
  3. Heat olive oil in a pan over medium heat. Season the scallops with salt and pepper, then sear them in the pan for about 2-3 minutes on each side until golden brown and cooked through.
  4. In a serving bowl, layer the softened vermicelli, followed by the julienned carrot, cucumber, and fresh herbs.
  5. Place the seared scallops on top of the vermicelli and vegetables.
  6. Drizzle the lime dressing over the dish and garnish with sliced chili pepper if desired.
