Steps
- Soak the rice vermicelli in hot water for about 10 minutes or until soft, then drain and set aside.
- In a mixing bowl, combine lime juice, fish sauce, honey, minced garlic, salt, and pepper. Whisk together to make the dressing.
- Heat olive oil in a pan over medium heat. Season the scallops with salt and pepper, then sear them in the pan for about 2-3 minutes on each side until golden brown and cooked through.

- Place the seared scallops on top of the vermicelli and vegetables.
