- Rice vermicelli - 200 grams

- Fish sauce - 1 tablespoon
- Honey - 1 teaspoon
- Cucumber (sliced) - ½ medium
- Carrot (julienned) - 1 medium
- Fresh mint leaves - 10 grams
- Fresh cilantro - 10 grams
- Chili pepper (sliced, optional) - 1 small
- Roasted peanuts (crushed) - 30 grams
Steps
- Soak the rice vermicelli in warm water for about 10 minutes until soft, then drain and set aside.
- In a bowl, mix garlic, lime juice, sesame oil, fish sauce, and honey to create the dressing.
- In a skillet over medium heat, add a little oil and sauté the minced garlic until fragrant, then add shrimp and cook until pink and opaque, about 3-4 minutes.
- In serving bowls, place the drained vermicelli as a base, then top with cooked shrimp, cucumber slices, carrot julienne, mint, cilantro, and chili pepper if using.
- Drizzle the dressing over the top and sprinkle with crushed roasted peanuts before serving.
