Ingredients

  • Rice vermicelli - 200 grams
  • Shrimp (peeled and deveined) - 150 grams
  • Garlic (minced) - 2 cloves
  • Lime juice - 2 tablespoons
  • Sesame oil - 1 tablespoon
  • Fish sauce - 1 tablespoon
  • Honey - 1 teaspoon
  • Cucumber (sliced) - ½ medium
  • Carrot (julienned) - 1 medium
  • Fresh mint leaves - 10 grams
  • Fresh cilantro - 10 grams
  • Chili pepper (sliced, optional) - 1 small
  • Roasted peanuts (crushed) - 30 grams

Steps

  1. Soak the rice vermicelli in warm water for about 10 minutes until soft, then drain and set aside.
  2. In a bowl, mix garlic, lime juice, sesame oil, fish sauce, and honey to create the dressing.
  3. In a skillet over medium heat, add a little oil and sauté the minced garlic until fragrant, then add shrimp and cook until pink and opaque, about 3-4 minutes.
  4. In serving bowls, place the drained vermicelli as a base, then top with cooked shrimp, cucumber slices, carrot julienne, mint, cilantro, and chili pepper if using.
  5. Drizzle the dressing over the top and sprinkle with crushed roasted peanuts before serving.
