Ingredients

  • Rice vermicelli noodles - 200 grams
  • Halal pork (thinly sliced) - 200 grams
  • Garlic (minced) - 2 cloves
  • Shallots (sliced) - 1 medium
  • Fish sauce - 3 tablespoons
  • Lime juice - 2 tablespoons
  • Sugar - 1 tablespoon
  • Black pepper - 1 teaspoon
  • Vegetable oil - 2 tablespoons
  • Cucumber (sliced) - 1 small
  • Carrot (julienned) - 1 medium
  • Fresh mint leaves - 20 grams
  • Fresh cilantro - 20 grams
  • Chili (sliced, optional) - 1 small

Steps

  1. Prepare the rice vermicelli according to package instructions, usually soaking in hot water for 10-15 minutes until softened.
  2. In a bowl, mix the minced garlic, sliced shallots, fish sauce, lime juice, sugar, and black pepper to create a marinade.
  3. Add the sliced halal pork to the marinade, ensuring all pieces are well coated. Let it marinate for at least 10 minutes.
  4. Heat vegetable oil in a grill pan over medium-high heat. Add the marinated pork and grill for about 3-4 minutes on each side until cooked through and slightly charred.
  5. While the pork is grilling, prepare the fresh herbs and vegetables: slice cucumber, julienne carrot, and set aside mint and cilantro.
  6. Once the pork is done, remove it from the grill and let it rest for a couple of minutes before slicing into bite-sized pieces.
  7. To serve, divide the softened rice vermicelli into two bowls, top with grilled pork, cucumber, carrot, fresh mint, and cilantro. Add sliced chili if desired.
  8. Drizzle additional fish sauce dressing over the top, mix well, and enjoy your Bún Sò!
