Ingredients

  • Crab meat - 200 grams
  • Chicken broth - 500 ml
  • Coconut milk - 200 ml
  • Eggs - 2 large
  • Fish sauce - 2 tablespoons
  • Tomatoes - 2 medium, diced
  • Shallots - 2, minced
  • Garlic - 2 cloves, minced
  • Lime juice - 1 tablespoon
  • Spinach - 100 grams, fresh
  • Mushrooms - 100 grams, sliced
  • Cilantro - 30 grams, chopped
  • Red chili - 1, sliced (optional)
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. In a pot, heat a little oil over medium heat and sauté the minced shallots and garlic until fragrant.
  2. Add the diced tomatoes and cook until they start to soften, about 3-4 minutes.
  3. Pour in the chicken broth and bring to a simmer, then add the coconut milk and stir well.
  4. Add the crab meat, fish sauce, lime juice, and season with salt and pepper to taste. Simmer for an additional 5 minutes.
  5. In a separate bowl, beat the eggs and slowly drizzle them into the hot soup while stirring gently to create egg ribbons.
  6. Add the sliced mushrooms and spinach to the pot, cooking just until the spinach wilts, about 2 minutes.
  7. Serve the soup hot, garnished with chopped cilantro and sliced chili if desired.
