- Tofu - 100 grams, cubed
- Eggs - 2 large

- Fresh herbs (Vietnamese mint, cilantro) - 1 cup, chopped
- Lime - 1, cut into wedges
- Chili sauce - to taste
- Salt - to taste
- Black pepper - to taste
Steps
- In a pot, heat a tablespoon of oil over medium heat. Add the chopped onion and minced garlic, sautéing until fragrant.
- Add the chopped tomatoes and cook until they soften and break down, about 5-7 minutes.
- Pour in the vegetable broth and bring to a simmer. Add the fish sauce, salt, and black pepper to taste.
- In a separate pot, cook the rice vermicelli noodles according to package instructions. Once cooked, drain and set aside.
- Incorporate the crab meat and cubed tofu into the broth, cooking for an additional 5 minutes.
- Crack the eggs into a bowl and beat them lightly. Slowly drizzle the beaten eggs into the simmering broth, stirring gently to create egg ribbons.
- To serve, place a portion of the cooked rice vermicelli noodles into bowls, ladle the crab and broth mixture over the noodles, and top with chopped green onions and fresh herbs.
- Serve hot with lime wedges and chili sauce on the side for added flavor.
