Ingredients

  • Crab meat - 200 grams
  • Rice vermicelli noodles - 100 grams

  • Vegetable broth - 1 liter
  • Tofu - 100 grams, cubed
  • Eggs - 2 large
  • Green onions - 2 stalks, chopped
  • Fresh herbs (Vietnamese mint, cilantro) - 1 cup, chopped
  • Lime - 1, cut into wedges
  • Chili sauce - to taste
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. In a pot, heat a tablespoon of oil over medium heat. Add the chopped onion and minced garlic, sautéing until fragrant.
  2. Add the chopped tomatoes and cook until they soften and break down, about 5-7 minutes.
  3. Pour in the vegetable broth and bring to a simmer. Add the fish sauce, salt, and black pepper to taste.
  4. In a separate pot, cook the rice vermicelli noodles according to package instructions. Once cooked, drain and set aside.
  5. Incorporate the crab meat and cubed tofu into the broth, cooking for an additional 5 minutes.
  6. Crack the eggs into a bowl and beat them lightly. Slowly drizzle the beaten eggs into the simmering broth, stirring gently to create egg ribbons.
  7. To serve, place a portion of the cooked rice vermicelli noodles into bowls, ladle the crab and broth mixture over the noodles, and top with chopped green onions and fresh herbs.
  8. Serve hot with lime wedges and chili sauce on the side for added flavor.
