Ingredients

  • Rice vermicelli noodles - 100 grams
  • Crab paste - 50 grams
  • Ground pork - 100 grams
  • Diced tomatoes - 200 grams
  • Vegetable broth - 500 ml
  • Fish sauce - 2 tablespoons
  • Tamarind paste - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Shallots - 2, thinly sliced
  • Fresh herbs (basil, mint, cilantro) - 30 grams each
  • Bean sprouts - 100 grams
  • Lime - 1, cut into wedges
  • Chili - 1, sliced (optional)
  • Salt - to taste
  • Pepper - to taste

Steps

  1. In a pot, heat a splash of oil over medium heat and sauté the shallots and garlic until fragrant.
  2. Add the diced tomatoes and cook until softened, about 5 minutes.
  3. Pour in the vegetable broth, then add the crab paste, ground pork, fish sauce, tamarind paste, salt, and pepper. Stir well and let it simmer for 10 minutes.
  4. In a separate pot, cook the rice vermicelli noodles according to package instructions, then drain and set aside.
  5. Once the broth is ready, taste and adjust seasoning if necessary.
  6. To serve, place a portion of noodles in a bowl, ladle the broth over, and top with fresh herbs, bean sprouts, and optional chili slices.
  7. Serve with lime wedges on the side for added flavor.
