  • Fresh mint leaves - 20 grams
  • Cilantro - 20 grams
  • Green onions - 2 stalks
  • Garlic - 2 cloves
  • Ginger - 10 grams
  • Chicken broth - 500 ml
  • Fish sauce - 2 tablespoons
  • Lime - 1
  • Red chili - 1 (optional)
  • Olive oil - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. 1. Begin by slicing the duck breast into thin strips and season with salt and black pepper.
  2. 2. Heat olive oil in a pan over medium heat and sear the duck strips until browned and cooked through, about 5-7 minutes. Remove from heat and set aside.
  3. 3. In the same pan, add minced garlic and ginger, sautéing for 1-2 minutes until fragrant.
  4. 4. Pour in the chicken broth and bring to a gentle simmer. Add the fish sauce, adjusting to taste.
  5. 5. While the broth simmers, spiralize or julienne the zucchini into thin noodles.
  6. 6. Add the zucchini noodles and shiitake mushrooms to the broth, cooking for 3-4 minutes until tender.
  7. 7. Stir in the bean sprouts and cook for an additional 1-2 minutes.
  8. 8. To serve, distribute the zucchini noodles and vegetables into bowls, top with the seared duck, and garnish with fresh mint, cilantro, sliced green onions, and red chili if desired.
  9. 9. Squeeze fresh lime juice over each bowl before serving.
