  • Vegetable oil - 15 ml
  • Brown sugar - 10 grams
  • Five-spice powder - 5 grams
  • Garlic, minced - 2 cloves
  • Ginger, grated - 1 teaspoon
  • Lime juice - 15 ml
  • Black pepper - 1/2 teaspoon
  • Rice noodles - 100 grams
  • Cucumber, sliced - 1/2 medium
  • Carrot, julienned - 1 medium
  • Fresh cilantro - 20 grams
  • Fresh mint - 20 grams
  • Peanuts, crushed - 20 grams
  • Lettuce leaves - 4 large

Steps

  1. In a bowl, combine soy sauce, vegetable oil, brown sugar, five-spice powder, minced garlic, grated ginger, lime juice, and black pepper to create the marinade.
  2. Cut the seitan into thin slices and add to the marinade, ensuring all pieces are well-coated. Cover and let marinate for at least 30 minutes.
  3. While the seitan is marinating, cook the rice noodles according to package instructions, then drain and set aside.
  4. Preheat a grill or grill pan over medium-high heat.
  5. Once marinated, grill the seitan slices for about 3-4 minutes on each side, or until they have nice grill marks and are heated through.
  6. To assemble, place a small amount of rice noodles on a lettuce leaf, top with grilled seitan, cucumber slices, carrot, fresh cilantro, fresh mint, and a sprinkle of crushed peanuts.
