Steps

  1. Preheat your grill or a grill pan over medium-high heat.
  2. Cut the king oyster mushrooms and firm tofu into bite-sized cubes.
  3. Chop the bell pepper and red onion into similar-sized pieces.
  4. In a bowl, combine the sesame oil, soy sauce, maple syrup, minced garlic, ground black pepper, and lime juice to create the marinade.
  5. Add the mushroom and tofu cubes, bell pepper, and red onion to the marinade, tossing well to ensure everything is coated. Let it marinate for at least 15 minutes.
  6. While the ingredients are marinating, soak the rice paper sheets in warm water until they are soft, about 10 seconds, then lay them flat on a clean surface.
  7. Once marinated, thread the mushroom, tofu, bell pepper, and onion onto skewers, alternating the ingredients for a colorful presentation.
  8. Place the skewers on the grill and cook for about 10-12 minutes, turning occasionally until everything is nicely charred and cooked through.
