Ingredients

  • Beef sirloin - 300 grams

  • Soy sauce - 2 tablespoons
  • Fish sauce - 1 tablespoon
  • Sugar - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Lemon juice - 1 tablespoon
  • Vegetable oil - 1 tablespoon
  • Shrimp paste (Mắm Tôm) - 2 tablespoons
  • Lime - 1, cut into wedges
  • Fresh herbs (cilantro, mint, or basil) - handful

Steps

  1. Cut the beef sirloin into thin slices, about 1/2 cm thick.
  2. In a bowl, combine minced garlic, minced shallots, soy sauce, fish sauce, sugar, black pepper, lemon juice, and vegetable oil to create a marinade.
  3. Add the sliced beef to the marinade and mix well. Let it marinate for at least 15 minutes.
  4. While the beef is marinating, prepare the dipping sauce by mixing the shrimp paste with a bit of warm water to thin it out (about 1-2 tablespoons of water). Adjust to taste.
  5. Preheat the grill or a grill pan over medium-high heat.
  6. Once the grill is hot, add the marinated beef slices in a single layer. Grill for about 3-4 minutes on each side until cooked to your desired doneness.
  7. Remove the beef from the grill and let it rest for a couple of minutes.
  8. Serve the grilled beef with the shrimp paste sauce, lime wedges, and a handful of fresh herbs on the side.
