Ingredients

  • Beef sirloin - 300 grams
  • Fish sauce - 2 tablespoons
  • Mắm ruốc (fermented shrimp paste) - 1 tablespoon
  • Garlic - 3 cloves, minced
  • Shallots - 2, finely chopped
  • Black pepper - 1 teaspoon
  • Coconut sugar - 1 teaspoon (optional, for a touch of sweetness)
  • Lime juice - 2 tablespoons
  • Fresh mint leaves - 10 grams, chopped
  • Lettuce leaves - 4 large leaves (for serving)
  • Cucumber - 1 small, sliced (for serving)
  • Chili pepper - 1, sliced (for serving)

Steps

  1. Slice the beef sirloin into thin strips, about 1 cm wide.
  2. In a mixing bowl, combine the fish sauce, mắm ruốc, minced garlic, chopped shallots, black pepper, and coconut sugar (if using). Mix well to form a marinade.
  3. Add the sliced beef to the marinade, ensuring each piece is well coated. Cover and let it marinate in the refrigerator for at least 20 minutes.
  4. Preheat a grill or grill pan over medium-high heat.
  5. Thread the marinated beef onto skewers (if using wooden skewers, soak them in water for 30 minutes to prevent burning).
  6. Grill the beef skewers for about 3-4 minutes on each side, or until cooked to your desired doneness.
  7. While the beef is grilling, prepare the dipping sauce by mixing lime juice, chopped mint leaves, and additional fish sauce to taste.
  8. Serve the grilled beef with lettuce leaves, cucumber slices, and sliced chili pepper, along with the dipping sauce on the side.
