- Beef sirloin - 200 grams
- Rice flour - 100 grams
- Coconut milk - 200 ml
- Turmeric powder - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/2 teaspoon
- Sugar - 1 teaspoon
- Garlic - 2 cloves, minced
- Lemon grass - 1 stalk, finely chopped
- Vegetable oil - 2 tablespoons
- Water - 250 ml
- Lettuce leaves - 4 leaves
- Mint leaves - 1/2 cup
- Cilantro - 1/2 cup
- Sliced cucumber - 1/2 cup
- Sriracha sauce - for serving
Steps
- In a bowl, combine the beef sirloin with garlic, lemongrass, salt, pepper, and sugar. Let it marinate for at least 15 minutes.
- In another bowl, mix the rice flour, coconut milk, turmeric powder, and water until smooth to create the batter for the pancakes.
- Heat a non-stick skillet over medium heat and add a teaspoon of vegetable oil. Pour in a ladle of the batter and cook until the edges are crispy and the surface is set, about 3-4 minutes. Flip and cook for another 1-2 minutes. Repeat for the remaining batter.
- Preheat a grill or grill pan over medium-high heat. Grill the marinated beef slices for about 3-4 minutes on each side, or until cooked to your desired doneness.
- To serve, place a pancake on a plate, add grilled beef, and top with lettuce, mint, cilantro, and cucumber. Wrap it up and enjoy with a drizzle of Sriracha sauce.
