- Squid - 100 grams, cleaned and sliced
- Fish fillets (halal) - 150 grams, cut into bite-sized pieces
- Garlic - 3 cloves, minced
- Shallots - 2, thinly sliced
- Fish sauce (halal) - 2 tablespoons
- Lime juice - 2 tablespoons
- Coconut milk - 200 milliliters
- Chicken or vegetable broth - 500 milliliters
- Fresh cilantro - 20 grams, chopped
- Thai basil - 20 grams, leaves only
- Bean sprouts - 100 grams
- Red chili - 1, sliced (optional)
- Salt - to taste
- Ground black pepper - to taste
Steps
- Cook the rice vermicelli noodles according to package instructions, then drain and rinse under cold water. Set aside.
- In a large pot, heat a tablespoon of oil over medium heat and sauté the minced garlic and sliced shallots until fragrant.
- Add the shrimp, squid, and fish fillets to the pot and cook for about 3-4 minutes until they are just cooked through.
- Pour in the chicken or vegetable broth and coconut milk, then bring to a simmer.
- Stir in the fish sauce, lime juice, and season with salt and ground black pepper to taste. Let it simmer for another 5 minutes.
- In serving bowls, place a portion of the cooked vermicelli noodles. Ladle the seafood broth and seafood mixture over the noodles.
- Top with fresh cilantro, Thai basil, bean sprouts, and sliced red chili if desired. Serve immediately.
