Ingredients

  • Rice vermicelli noodles - 200 grams
  • Shrimp - 150 grams, peeled and deveined
  • Squid - 100 grams, cleaned and sliced
  • Fish fillets (halal) - 150 grams, cut into bite-sized pieces
  • Garlic - 3 cloves, minced
  • Shallots - 2, thinly sliced
  • Fish sauce (halal) - 2 tablespoons
  • Lime juice - 2 tablespoons
  • Coconut milk - 200 milliliters
  • Chicken or vegetable broth - 500 milliliters
  • Fresh cilantro - 20 grams, chopped
  • Thai basil - 20 grams, leaves only
  • Bean sprouts - 100 grams
  • Red chili - 1, sliced (optional)
  • Salt - to taste
  • Ground black pepper - to taste

Steps

  1. Cook the rice vermicelli noodles according to package instructions, then drain and rinse under cold water. Set aside.
  2. In a large pot, heat a tablespoon of oil over medium heat and sauté the minced garlic and sliced shallots until fragrant.
  3. Add the shrimp, squid, and fish fillets to the pot and cook for about 3-4 minutes until they are just cooked through.
  4. Pour in the chicken or vegetable broth and coconut milk, then bring to a simmer.
  5. Stir in the fish sauce, lime juice, and season with salt and ground black pepper to taste. Let it simmer for another 5 minutes.
  6. In serving bowls, place a portion of the cooked vermicelli noodles. Ladle the seafood broth and seafood mixture over the noodles.
  7. Top with fresh cilantro, Thai basil, bean sprouts, and sliced red chili if desired. Serve immediately.
