Ingredients

  • Rice vermicelli noodles - 150 grams
  • Chicken breast - 250 grams
  • Garlic - 2 cloves, minced
  • Shallots - 1, finely chopped
  • Soy sauce - 3 tablespoons
  • Fish sauce - 1 tablespoon
  • Honey - 1 tablespoon
  • Lime juice - 2 tablespoons
  • Vegetable oil - 2 tablespoons
  • Fresh mint leaves - 20 grams
  • Cilantro - 20 grams
  • Carrot - 1, julienned
  • Cucumber - 1, julienned
  • Peanuts - 30 grams, crushed
  • Chili flakes - to taste

Steps

  1. Soak rice vermicelli noodles in hot water for 15 minutes until softened, then drain and set aside.
  2. In a bowl, mix minced garlic, chopped shallots, soy sauce, fish sauce, honey, lime juice, and vegetable oil to create a marinade.
  3. Cut the chicken breast into thin strips and marinate in the mixture for at least 10 minutes.
  4. Preheat a grill or grill pan over medium heat and grill the marinated chicken strips for 5-7 minutes on each side until cooked through and slightly charred.
  5. In serving bowls, place a portion of the soaked noodles and top with grilled chicken, julienned carrots, and cucumbers.
  6. Garnish with fresh mint, cilantro, crushed peanuts, and chili flakes to taste.
  7. Drizzle any remaining marinade over the dish before serving.
