- Pork belly - 200 grams
- Ground pork - 150 grams
- Rice noodles - 200 grams
- Garlic - 3 cloves, minced
- Shallots - 2, finely chopped
- Fish sauce - 3 tablespoons
- Sugar - 1 tablespoon
- Black pepper - 1 teaspoon
- Soy sauce - 1 tablespoon
- Vinegar - 2 tablespoons
- Carrot - 1 small, julienned
- Cucumber - 1 small, sliced
- Fresh mint - 20 grams
- Fresh cilantro - 20 grams
- Lettuce leaves - 4 leaves
- Chili pepper - 1, sliced (optional)
- Water - 1 liter
Steps
- In a bowl, combine the minced garlic, chopped shallots, fish sauce, sugar, black pepper, and soy sauce to create a marinade.
- Slice the pork belly into thin strips and mix with the marinade. Allow to marinate for at least 30 minutes.
- While the pork is marinating, prepare the rice noodles according to package instructions. Drain and set aside.
- In a separate bowl, mix the ground pork with 1 clove of minced garlic, salt, and pepper. Form into small patties.
- Preheat a grill or stovetop grill pan over medium-high heat. Grill the marinated pork belly for about 3-4 minutes on each side until cooked through.
- Cook the ground pork patties on the grill for about 4-5 minutes on each side until fully cooked.
- In a small bowl, mix vinegar with sugar and a pinch of salt to create a dipping sauce.
- To serve, place a bed of rice noodles in a bowl, top with grilled pork belly and patties, and garnish with lettuce, cucumber, carrot, mint, cilantro, and sliced chili pepper.
- Serve with the dipping sauce on the side.
