- Pork shoulder - 200 grams, minced
- Zucchini - 200 grams, spiralized
- Garlic - 2 cloves, minced
- Fish sauce - 2 tablespoons
- Oyster sauce - 1 tablespoon
- Brown sugar substitute - 1 tablespoon
- Black pepper - 1 teaspoon
- Spring roll wrappers (low-carb) - 4 pieces
- Carrot - 50 grams, julienned
- Cucumber - 50 grams, julienned
- Fresh mint leaves - 10 grams
- Fresh cilantro - 10 grams
- Lime - 1, cut into wedges
- Peanut butter - 1 tablespoon (for dipping sauce)
- Soy sauce - 1 tablespoon (for dipping sauce)
Steps
- In a mixing bowl, combine minced pork, garlic, fish sauce, oyster sauce, brown sugar substitute, and black pepper. Mix well and form into small patties.
- Heat a grill or grill pan over medium heat. Grill the pork patties for about 5-7 minutes on each side until cooked through and slightly charred.
- While the pork is grilling, prepare the spring rolls. Place julienned carrots and cucumbers in the center of each low-carb spring roll wrapper, then roll tightly and seal the edges with a little water.
- Fry the spring rolls in a pan with a small amount of oil over medium heat until golden and crispy, about 3-4 minutes on each side.
- To serve, place a bed of spiralized zucchini noodles on each plate. Top with grilled pork patties, crispy spring rolls, and garnish with fresh mint and cilantro.
