Ingredients

  • Pork shoulder - 200 grams, minced
  • Zucchini - 200 grams, spiralized
  • Garlic - 2 cloves, minced
  • Fish sauce - 2 tablespoons
  • Oyster sauce - 1 tablespoon
  • Brown sugar substitute - 1 tablespoon
  • Black pepper - 1 teaspoon
  • Spring roll wrappers (low-carb) - 4 pieces
  • Carrot - 50 grams, julienned
  • Cucumber - 50 grams, julienned
  • Fresh mint leaves - 10 grams
  • Fresh cilantro - 10 grams
  • Lime - 1, cut into wedges
  • Peanut butter - 1 tablespoon (for dipping sauce)
  • Soy sauce - 1 tablespoon (for dipping sauce)

Steps

  1. In a mixing bowl, combine minced pork, garlic, fish sauce, oyster sauce, brown sugar substitute, and black pepper. Mix well and form into small patties.
  2. Heat a grill or grill pan over medium heat. Grill the pork patties for about 5-7 minutes on each side until cooked through and slightly charred.
  3. While the pork is grilling, prepare the spring rolls. Place julienned carrots and cucumbers in the center of each low-carb spring roll wrapper, then roll tightly and seal the edges with a little water.
  4. Fry the spring rolls in a pan with a small amount of oil over medium heat until golden and crispy, about 3-4 minutes on each side.
  5. To serve, place a bed of spiralized zucchini noodles on each plate. Top with grilled pork patties, crispy spring rolls, and garnish with fresh mint and cilantro.
