Ingredients
- Ground pork - 250 grams
- Shredded carrots - 50 grams
- Shredded cabbage - 50 grams
- Chopped green onions - 2 tablespoons
- Garlic, minced - 2 cloves
- Fish sauce - 1 tablespoon
- Coconut aminos - 1 tablespoon
- Black pepper - 1/2 teaspoon
- Egg - 1 large
- Paleo-friendly spring roll wrappers - 8 pieces
- Rice noodles (zucchini noodles for Paleo) - 200 grams
- Lettuce leaves - 4 large
- Fresh mint - 1/4 cup
- Fresh cilantro - 1/4 cup
- Lime - 1, cut into wedges
- Coconut oil - for frying
Steps
- In a large bowl, combine ground pork, shredded carrots, shredded cabbage, chopped green onions, minced garlic, fish sauce, coconut aminos, black pepper, and the egg. Mix well until all ingredients are evenly incorporated.
- Place a spring roll wrapper on a clean surface. Spoon about 2 tablespoons of the filling mixture onto the lower third of the wrapper. Roll it away from you, folding in the sides as you go, to form a tight roll. Repeat with remaining wrappers and filling.
- Heat coconut oil in a frying pan over medium heat. Once hot, add the spring rolls in batches, ensuring not to overcrowd the pan. Fry until golden brown and crispy, about 3-4 minutes on each side. Remove and drain on paper towels.
- Cook the zucchini noodles according to package instructions or sauté briefly in a pan until tender. Divide the noodles between two bowls.
- Top the noodles with crispy spring rolls, and garnish with lettuce leaves, fresh mint, and cilantro.
- Serve with lime wedges on the side for squeezing over the dish.
