Ingredients

  • Pork belly - 200 grams
  • Ground pork - 100 grams
  • Rice vermicelli noodles - 100 grams
  • Garlic - 2 cloves, minced
  • Shallots - 1, finely chopped
  • Fish sauce - 3 tablespoons
  • Sugar - 1 tablespoon
  • Black pepper - 1/2 teaspoon
  • Lime juice - 2 tablespoons
  • Carrot - 1 small, julienned
  • Cucumber - 1 small, julienned
  • Mint leaves - 1/4 cup
  • Coriander leaves - 1/4 cup
  • Chili pepper - 1, sliced (optional)
  • Peanut oil - 2 tablespoons

Steps

  1. In a bowl, combine the ground pork, minced garlic, 1 tablespoon of fish sauce, sugar, and black pepper. Mix well and form into small meatballs.
  2. Cut the pork belly into thin slices and marinate with 2 tablespoons of fish sauce, minced shallots, and lime juice for 10 minutes.
  3. Heat 1 tablespoon of peanut oil in a pan over medium heat. Cook the meatballs until browned and cooked through, about 8-10 minutes. Remove and set aside.
  4. In the same pan, add the marinated pork belly slices and cook until charred and cooked through, about 4-5 minutes per side. Remove from heat.
  5. Cook the rice vermicelli noodles according to package instructions, then drain and rinse under cold water.
  6. To serve, place a portion of noodles in a bowl, top with grilled pork and meatballs, and garnish with julienned carrot, cucumber, mint, coriander, and chili pepper if desired.
