Bún Chả

Ingredients
- Pork belly - 200 grams
- Ground pork - 100 grams
- Rice vermicelli noodles - 100 grams
- Garlic - 2 cloves, minced
- Shallots - 1, finely chopped
- Fish sauce - 3 tablespoons
- Sugar - 1 tablespoon
- Black pepper - 1/2 teaspoon
- Lime juice - 2 tablespoons
- Carrot - 1 small, julienned
- Cucumber - 1 small, julienned
- Mint leaves - 1/4 cup
- Coriander leaves - 1/4 cup
- Chili pepper - 1, sliced (optional)
- Peanut oil - 2 tablespoons
Steps
- In a bowl, combine the ground pork, minced garlic, 1 tablespoon of fish sauce, sugar, and black pepper. Mix well and form into small meatballs.
- Cut the pork belly into thin slices and marinate with 2 tablespoons of fish sauce, minced shallots, and lime juice for 10 minutes.
- Heat 1 tablespoon of peanut oil in a pan over medium heat. Cook the meatballs until browned and cooked through, about 8-10 minutes. Remove and set aside.
- In the same pan, add the marinated pork belly slices and cook until charred and cooked through, about 4-5 minutes per side. Remove from heat.
- Cook the rice vermicelli noodles according to package instructions, then drain and rinse under cold water.
- To serve, place a portion of noodles in a bowl, top with grilled pork and meatballs, and garnish with julienned carrot, cucumber, mint, coriander, and chili pepper if desired.
