  • Brown sugar - 1 tablespoon
  • Black pepper - 1 teaspoon
  • Fresh mint leaves - 20 grams
  • Cilantro leaves - 20 grams
  • Cucumber - 1, julienned
  • Carrot - 1, shredded
  • Chili (optional) - 1, sliced

Steps

  1. Soak the rice vermicelli in warm water for 15 minutes until softened, then drain and set aside.
  2. In a bowl, combine minced garlic, chopped lemongrass, fish sauce, lime juice, brown sugar, and black pepper to create a marinade.
  3. Add the fish fillets to the marinade and let them sit for about 10 minutes.
  4. Preheat a grill or grill pan over medium heat and brush with vegetable oil.
  5. Grill the marinated fish for about 4-5 minutes on each side, or until cooked through and slightly charred.
  6. While the fish is grilling, prepare the fresh herbs, cucumber, and carrot for garnish.
  7. To serve, place a portion of rice vermicelli in each bowl, top with grilled fish, and garnish with mint, cilantro, cucumber, carrot, and sliced chili if desired.
  8. Drizzle additional lime juice and serve with extra fish sauce on the side for dipping.
