Steps
- Cook the rice vermicelli noodles according to package instructions, then drain and set aside.
- In a bowl, combine fish sauce, lime juice, honey, and sliced chili pepper to create the dipping sauce. Set aside.
- In a pan, heat vegetable oil over medium heat. Add minced garlic and lemongrass, and sauté until fragrant.
- Add the white fish fillets to the pan, seasoning with salt. Cook for about 3-4 minutes on each side until the fish is cooked through and flaky.
- To assemble, place a portion of rice vermicelli in a bowl. Top with the cooked fish, julienned cucumber, fresh herbs, and crushed peanuts.
- Serve with the dipping sauce on the side for drizzling over the dish.
