  • Lime juice - 1 tablespoon
  • Honey - 1 teaspoon
  • Chili pepper - 1 small, sliced
  • Cucumber - 1/2, julienned
  • Fresh herbs (mint, cilantro, or basil) - 1/2 cup, chopped
  • Peanuts - 2 tablespoons, crushed
  • Vegetable oil - 1 tablespoon
  • Salt - to taste

Steps

  1. Cook the rice vermicelli noodles according to package instructions, then drain and set aside.
  2. In a bowl, combine fish sauce, lime juice, honey, and sliced chili pepper to create the dipping sauce. Set aside.
  3. In a pan, heat vegetable oil over medium heat. Add minced garlic and lemongrass, and sauté until fragrant.
  4. Add the white fish fillets to the pan, seasoning with salt. Cook for about 3-4 minutes on each side until the fish is cooked through and flaky.
  5. To assemble, place a portion of rice vermicelli in a bowl. Top with the cooked fish, julienned cucumber, fresh herbs, and crushed peanuts.
  6. Serve with the dipping sauce on the side for drizzling over the dish.
