Ingredients
- Zucchini - 2 medium (about 300g)
- Snails (canned or fresh) - 200g
- Fish sauce - 2 tablespoons
- Chicken or beef broth - 500ml
- Coconut oil - 1 tablespoon
- Garlic - 3 cloves, minced
- Shallots - 2, finely sliced
- Lemon grass - 1 stalk, bruised
- Fresh mint leaves - 1/4 cup
- Fresh coriander (cilantro) - 1/4 cup
- Chili (fresh or dried) - to taste
- Lime - 1, cut into wedges
- Salt - to taste
- Black pepper - to taste
Steps
- Spiralize the zucchini using a spiralizer or a julienne peeler to create zucchini noodles. Set aside.
- In a pot, heat the coconut oil over medium heat. Add the minced garlic and sliced shallots, sautéing until fragrant and translucent.
- Add the bruised lemon grass to the pot and pour in the chicken or beef broth. Bring to a simmer.
- Stir in the snails and fish sauce, then season with salt and black pepper to taste. Let the broth simmer for about 10-15 minutes to allow the flavors to meld.
- While the broth is simmering, prepare the zucchini noodles by briefly sautéing them in a separate pan over medium heat for about 2-3 minutes until just tender. Do not overcook.
- To serve, place a portion of zucchini noodles in each bowl, ladle the hot broth with snails over the top, and garnish with fresh mint and coriander leaves. Add chili according to your spice preference and serve with lime wedges on the side.
