- Beef shank - 200 grams
- Pork belly - 100 grams
- Beef bones - 300 grams
- Rice vermicelli noodles - 200 grams
- Shallots - 2, sliced
- Garlic - 3 cloves, minced
- Lemongrass - 2 stalks, bruised
- Fish sauce - 3 tablespoons
- Chili paste - 1 tablespoon
- Salt - to taste
- Water - 1.5 liters
- Fresh mint - 10 grams
- Cilantro - 10 grams
- Lime - 1, cut into wedges
- Bean sprouts - 100 grams
- Red onion - 1, thinly sliced
- Chili pepper - 1, sliced (optional)
Steps
- In a large pot, combine beef bones and water. Bring to a boil, then reduce heat and simmer for 30 minutes to create a rich broth.
- Add the beef shank, pork belly, shallots, garlic, lemongrass, fish sauce, chili paste, and salt to the pot. Simmer for an additional 45 minutes until the meat is tender.
- Remove the beef shank and pork belly from the pot, and set aside to cool. Strain the broth to remove solids and return the clear broth to the pot.
- While the broth is simmering, cook the rice vermicelli noodles according to package instructions. Drain and set aside.
- Slice the cooled beef shank and pork belly into thin pieces.
- To serve, divide the cooked noodles into bowls, top with sliced beef, and ladle the hot broth over them. Garnish with fresh mint, cilantro, bean sprouts, red onion, and chili pepper slices.
- Serve with lime wedges on the side for an extra zing.
