Ingredients

  • Beef shank - 200 grams
  • Pork belly - 100 grams
  • Beef bones - 300 grams
  • Rice vermicelli noodles - 200 grams
  • Shallots - 2, sliced
  • Garlic - 3 cloves, minced
  • Lemongrass - 2 stalks, bruised
  • Fish sauce - 3 tablespoons
  • Chili paste - 1 tablespoon
  • Salt - to taste
  • Water - 1.5 liters
  • Fresh mint - 10 grams
  • Cilantro - 10 grams
  • Lime - 1, cut into wedges
  • Bean sprouts - 100 grams
  • Red onion - 1, thinly sliced
  • Chili pepper - 1, sliced (optional)

Steps

  1. In a large pot, combine beef bones and water. Bring to a boil, then reduce heat and simmer for 30 minutes to create a rich broth.
  2. Add the beef shank, pork belly, shallots, garlic, lemongrass, fish sauce, chili paste, and salt to the pot. Simmer for an additional 45 minutes until the meat is tender.
  3. Remove the beef shank and pork belly from the pot, and set aside to cool. Strain the broth to remove solids and return the clear broth to the pot.
  4. While the broth is simmering, cook the rice vermicelli noodles according to package instructions. Drain and set aside.
  5. Slice the cooled beef shank and pork belly into thin pieces.
  6. To serve, divide the cooked noodles into bowls, top with sliced beef, and ladle the hot broth over them. Garnish with fresh mint, cilantro, bean sprouts, red onion, and chili pepper slices.
  7. Serve with lime wedges on the side for an extra zing.
