Ingredients

  • Zucchini - 2 medium-sized
  • Olive oil - 2 tablespoons

  • Black pepper - 1/2 teaspoon
  • Garlic powder - 1/2 teaspoon
  • Cream cheese - 100 grams
  • Grated mozzarella cheese - 100 grams
  • Chopped bell pepper - 1/2 cup
  • Chopped cooked chicken breast - 100 grams
  • Chopped black olives - 2 tablespoons
  • Chopped green onions - 2 tablespoons
  • Dried oregano - 1/2 teaspoon
  • Paprika - 1/2 teaspoon

Steps

  1. Spiralize the zucchini using a spiralizer or vegetable peeler to create zucchini noodles.
  2. Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the zucchini noodles, salt, black pepper, and garlic powder. Sauté for about 5-7 minutes until the noodles are tender but still slightly crunchy.
  3. In a mixing bowl, combine the cream cheese and grated mozzarella cheese. Mix until smooth and creamy.
  4. In the skillet, add the chopped bell pepper, cooked chicken, black olives, green onions, dried oregano, and paprika. Stir to combine with the zucchini noodles.
  5. Remove the skillet from heat and fold in the cheese mixture until everything is well coated.
  6. Transfer the mixture into a serving dish and drizzle with the remaining tablespoon of olive oil. Optionally, top with additional mozzarella cheese.
  7. Bake in a preheated oven at 180°C (350°F) for 10-15 minutes until the cheese is melted and bubbly. Serve hot.
