- Zucchini - 2 medium-sized
- Olive oil - 2 tablespoons
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Garlic powder - 1/2 teaspoon
- Cream cheese - 100 grams
- Grated mozzarella cheese - 100 grams
- Chopped bell pepper - 1/2 cup
- Chopped cooked chicken breast - 100 grams
- Chopped black olives - 2 tablespoons
- Chopped green onions - 2 tablespoons
- Dried oregano - 1/2 teaspoon
- Paprika - 1/2 teaspoon
Steps
- Spiralize the zucchini using a spiralizer or vegetable peeler to create zucchini noodles.
- Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the zucchini noodles, salt, black pepper, and garlic powder. Sauté for about 5-7 minutes until the noodles are tender but still slightly crunchy.
- In a mixing bowl, combine the cream cheese and grated mozzarella cheese. Mix until smooth and creamy.
- In the skillet, add the chopped bell pepper, cooked chicken, black olives, green onions, dried oregano, and paprika. Stir to combine with the zucchini noodles.
- Remove the skillet from heat and fold in the cheese mixture until everything is well coated.
- Transfer the mixture into a serving dish and drizzle with the remaining tablespoon of olive oil. Optionally, top with additional mozzarella cheese.
- Bake in a preheated oven at 180°C (350°F) for 10-15 minutes until the cheese is melted and bubbly. Serve hot.
