Ingredients

  • Zucchini - 2 medium-sized

  • Cherry tomatoes - 200 grams, halved
  • Spinach - 100 grams, fresh
  • Feta cheese - 50 grams, crumbled
  • Dried oregano - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh basil - a handful, chopped (for garnish)

Steps

  1. Spiralize the zucchini using a spiralizer or a vegetable peeler to create noodle-like strands. Set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
  3. Add the halved cherry tomatoes to the skillet and cook for 3-4 minutes until they start to soften.
  4. Stir in the spinach and dried oregano, cooking for another 2-3 minutes until the spinach wilts.
  5. Add the spiralized zucchini to the skillet, tossing everything together. Cook for an additional 2-3 minutes until the zucchini is just tender.
