- Zucchini - 300 grams
- All-purpose flour - 50 grams
- Chickpea flour - 30 grams
- Red onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Fresh parsley - 30 grams, chopped
- Fresh dill - 15 grams, chopped
- Turmeric powder - 1 teaspoon
- Cumin powder - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Olive oil - for frying
- Tahini - 2 tablespoons
- Lemon juice - 1 tablespoon
- Water - 2 tablespoons
Steps
- Grate the zucchini using a box grater or food processor and place it in a clean kitchen towel. Squeeze out excess moisture and transfer to a mixing bowl.
- Add the chopped red onion, minced garlic, chopped parsley, chopped dill, all-purpose flour, chickpea flour, turmeric powder, cumin powder, salt, and black pepper to the bowl with the zucchini. Mix well until combined.
- Heat a non-stick skillet over medium heat and add a tablespoon of olive oil.
- Form the zucchini mixture into small patties, about 6 cm in diameter, and place them in the skillet. Cook for 3-4 minutes on each side or until golden brown and crispy.
- In a small bowl, whisk together tahini, lemon juice, and water to create a smooth sauce.
- Remove the fritters from the skillet and drain on paper towels. Serve warm with the tahini sauce drizzled on top.
