Ingredients

  • Zucchini - 300 grams
  • All-purpose flour - 50 grams
  • Chickpea flour - 30 grams
  • Red onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Fresh parsley - 30 grams, chopped
  • Fresh dill - 15 grams, chopped
  • Turmeric powder - 1 teaspoon
  • Cumin powder - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Olive oil - for frying
  • Tahini - 2 tablespoons
  • Lemon juice - 1 tablespoon
  • Water - 2 tablespoons

Steps

  1. Grate the zucchini using a box grater or food processor and place it in a clean kitchen towel. Squeeze out excess moisture and transfer to a mixing bowl.
  2. Add the chopped red onion, minced garlic, chopped parsley, chopped dill, all-purpose flour, chickpea flour, turmeric powder, cumin powder, salt, and black pepper to the bowl with the zucchini. Mix well until combined.
  3. Heat a non-stick skillet over medium heat and add a tablespoon of olive oil.
  4. Form the zucchini mixture into small patties, about 6 cm in diameter, and place them in the skillet. Cook for 3-4 minutes on each side or until golden brown and crispy.
  5. In a small bowl, whisk together tahini, lemon juice, and water to create a smooth sauce.
  6. Remove the fritters from the skillet and drain on paper towels. Serve warm with the tahini sauce drizzled on top.
