  • Tomato - 1 medium, diced
  • Carrot - 1 small, diced
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Water - 200 milliliters
  • Fresh dill - 2 tablespoons, chopped (optional)
  • Lemon juice - 1 tablespoon (optional)

Steps

  1. Wash and trim the green beans, cutting them into 2-3 inch pieces.
  2. In a medium saucepan, heat the olive oil over medium heat and sauté the chopped onion until translucent, about 5 minutes.
  3. Add the minced garlic and diced carrot, cooking for an additional 2-3 minutes until fragrant.
  4. Stir in the diced tomato and cook for another 3-4 minutes until the tomatoes soften.
  5. Add the green beans to the saucepan, followed by salt, black pepper, and water. Stir to combine.
  6. Cover the saucepan and let it simmer on low heat for about 15-20 minutes, or until the green beans are tender.
  7. If using, stir in the chopped fresh dill and lemon juice just before serving.
