- Carrot - 1 small, diced

- Black pepper - 1/2 teaspoon
- Water - 200 milliliters
- Fresh dill - 2 tablespoons, chopped (optional)
- Lemon juice - 1 tablespoon (optional)
Steps
- Wash and trim the green beans, cutting them into 2-3 inch pieces.
- In a medium saucepan, heat the olive oil over medium heat and sauté the chopped onion until translucent, about 5 minutes.
- Add the minced garlic and diced carrot, cooking for an additional 2-3 minutes until fragrant.
- Stir in the diced tomato and cook for another 3-4 minutes until the tomatoes soften.
- Add the green beans to the saucepan, followed by salt, black pepper, and water. Stir to combine.
- Cover the saucepan and let it simmer on low heat for about 15-20 minutes, or until the green beans are tender.
- If using, stir in the chopped fresh dill and lemon juice just before serving.
- Serve warm or at room temperature.
